Vinification and ageingAn elegant creaminess

The grapes come from a single Pinot Blanc vineyard that has been the subject of thorough experimentation.

After being carefully harvested by hand, the whole grapes are pressed gently. Alcoholic fermentation takes place at a low temperature in second- and third-use French oak barriques. This is followed by malolactic fermentation in the same barriques.

The wine, subjected to constant batonnage, spends the next twelve months in the small barrels on fine lees. After natural decanting in stainless steel, the wine is aged in the bottle
